BVLGARI’s Bali Resort has proudly unveiled its newest culinary landmark, Il Ristorante – Niko Romito, helmed by the renowned chef Niko Romito, officially opening its doors in May 2025. Nestled at the heart of the resort and surrounded by tranquil pools and limestone cliffs, this restaurant offers guests an exquisite evening feast that beautifully blends the natural beauty of Bali with Italian flavors.
The restaurant features only 24 seats, creating a low-key yet refined dining atmosphere. The menu showcases classic Italian cuisine, infused with premium local ingredients such as Gintamani herbs, Bali tomatoes, and homegrown vegetables, crafting Italian dishes with a unique Bali twist. Chef Alessandro Mazzali, alongside the resident chefs, has designed a variety of innovative dishes that embody the signature elegance of BVLGARI Hotel.

The four-course meal The Classics begins with an Italian appetizer, featuring highlights such as smoked Bali ricotta tortellini topped with tomato and seafood. It concludes with the signature dessert of bread and Bali chocolate, offering a layered culinary experience from appetizer to dessert.


The seven-course menu The Tasting further showcases Niko Romito’s creative vision, featuring everything from shrimp paste scallops and creamy black cod to wagyu beef tenderloin accompanied by black truffle and green pepper. Each dish is meticulously crafted, culminating with a refreshing finale of wild berry sorbet, lemongrass mousse, and meringue—offering an experience that is both fresh and profound.


Additionally, there’s an à la carte menu featuring dishes like sliced red snapper with green peppers, grilled tuna loin, Spaghetti e pomodoro, and handmade duck tortellini, catering to the diverse tastes of guests.


To celebrate the opening of our new location in Bali, the restaurant has launched eight locally inspired dishes, such as seabass tartare, sea urchin cold noodles, and pink shrimp risotto. Each dish draws inspiration from the essence of Bali while incorporating high-end Italian culinary techniques, reinterpreting the delicious exchange between Mediterranean and Southeast Asian flavors.
