The Michelin-starred Chinese restaurant of The Ritz-Carlton, Macau, will collaborate with its counterpart from The Ritz-Carlton, Shanghai Pudong, which also holds a Michelin star, to present a Cantonese feast named Shining Stars Collaboration – Four Hands United on September 19, 2025. Following this, the event will be held in Shanghai on September 26. Renowned chefs Ho Hon-seng and Wong Ying-kit, each boasting over 40 years and 30 years of experience in Cantonese cuisine respectively, will offer a complete interpretation of Cantonese dishes through a dual-city collaboration, featuring a total of fifteen exquisite dishes that embody the artistry and innovation of Cantonese culinary traditions.

The lunch features a six-course menu, expertly curated by Chef Ho, showcasing three delectable appetizers. First up are the siu mai made with dragon claw mushrooms and celery, followed by the juicy and bouncy Long Huang shrimp dumplings, and a Chao-style Mazu fish jelly paired with Punin soybean sauce, all celebrating coastal flavors. The crispy scallops, coated in golden threads, are enhanced with the aromatic touch of curry leaves and small chili peppers, creatively reinterpreting a classic recipe. Next, patrons will enjoy a nourishing soup of black goji berry and ocean treasures, beautifully combining abalone, scallops, and black goji berries, resulting in a golden broth with a sweet aftertaste. To conclude, the meal features a refreshing Phoenix single tree old rock candy almond tofu, where the fragrant almond and floral notes intertwine, elevating the overall tasting experience.

The evening banquet unfolds in a progressive manner, starting with three exquisite cold dishes designed by Master Huang, featuring golden soft crab meat rolls, cherry shrimp wrapped in Xiapu seaweed, and village sauce with milk-fresh oysters, each delivering a delightful interplay of savory and crispy textures. Following this, Master He presents a rich soup made with wild Yunnan red mushrooms as the base, providing a deep, comforting flavor that warms the palate. The main courses are equally refined: Master Huang’s crispy lobster balls enveloped in a delicate layer of fragrant pastry, showcasing the tender and springy lobster meat with distinct layers; while Master He’s braised South African abalone with porcini mushrooms, slow-cooked to perfection, highlights the umami of the mushrooms complemented by the freshness of the abalone, showcasing the profound mastery of exquisite Cantonese cuisine.

Another spotlight dish features the five-spice honey-roasted Australian glacier toothfish, where the fish skin is crisp, and the meat is tender, finishing with a subtly sweet note from the roasted honey. The crispy garlic and numbing Australian wagyu beef ribs offer a melt-in-your-mouth texture combined with the spicy aroma of Sichuan pepper, leaving a rich aftertaste. The dessert, caramel chestnut braised egg, is equally unmissable, blending the fragrance of eggs and chestnuts to create an elegant finale to the meal.

This grand event also offers a wine pairing program designed by professional sommeliers, allowing guests to choose an upgraded experience as needed. The menu features exquisite wines from regions such as Bordeaux, Burgundy, and Alsace, perfectly complementing the dishes and enhancing the overall experience.
The event will take place at The Ritz-Carlton Hotel in Macau Li Xuan and The Ritz-Carlton Hotel in Pudong, Shanghai Jin Xuan. Both restaurants are situated on high floors, offering stunning views of the city skyline, providing guests with a dual sensory experience of sight and taste. Li Xuan, located on the 51st floor of Cotai, is the highest Chinese restaurant in Macau and has been awarded a Michelin star for nine consecutive years. Jin Xuan is positioned on the 53rd floor, allowing guests to gaze over the night scenes of the Huangpu River and Lujiazui, adding a glamorous atmosphere to the art of Cantonese cuisine.

This collaboration not only brings together the Michelin-level Cantonese culinary excellence of both regions but also adds depth to the culinary philosophy behind it. Chefs Ho Haan Sing and Wong Ying Kit are rooted in tradition yet driven by innovation, infusing every dish with a unique craftsmanship that showcases the inclusiveness and potential for expansion within Cantonese cuisine.
