Perrier-Jouët House of Wonder arrived in Hong Kong during the city’s annual Art Month, transforming the historic French restaurant Gaddi’s at The Peninsula Hong Kong into a champagne driven culinary showcase. The event brings together Perrier-Jouët Cellar Master Séverine Frerson and Gaddi’s executive chef Anne-Sophie Nicolas for an exclusive champagne pairing menu.

Maison Perrier-Jouët, founded in 1811 in the Champagne region of France, is known for its refined floral champagne style. The house has long drawn inspiration from nature and art. Séverine Frerson, appointed cellar master in 2020, became the first woman to hold the role in the brand’s more than 200 year history. She now oversees the preservation of Perrier-Jouët’s signature elegant and floral champagne profile.

The culinary collaboration centers on Anne-Sophie Nicolas, who became executive chef of Gaddi’s in 2024. She is the first woman to lead the restaurant since it opened in 1953. Nicolas describes her cooking style as “modern classic,” combining traditional French culinary structure with contemporary techniques to create refined flavors and textures.
To celebrate the Perrier-Jouët House of Wonder event, Nicolas created two special champagne pairing dishes designed specifically around the house’s wines.
The first dish, Tarte de Homard et Caviar, features Brittany lobster prepared as a delicate lobster tart. The dish is paired with sturgeon caviar, spinach, and cauliflower for a light yet layered texture. It is served with Perrier-Jouët Blanc de Blancs, a Chardonnay driven champagne known for citrus notes and floral aromatics that highlight the sweetness of seafood while maintaining a bright and balanced finish.

The second dish, Filet de Bœuf Australien, highlights Australian M8 grade beef tenderloin served with wild mushrooms, potatoes, and a veal jus infused with rosé champagne. The dish was inspired by Perrier-Jouët Blason Rosé and is served with Perrier-Jouët Belle Époque Rosé 2014. The vintage champagne offers notes of ripe red fruit and delicate florals with a fuller body, creating contrast and balance against the rich beef.

Beyond the limited time Perrier-Jouët House of Wonder menu, Gaddi’s wine list also offers several champagnes from the house, including Grand Brut, Blanc de Blancs, and Belle Époque. Guests can also enjoy Perrier-Jouët Belle Époque as an optional champagne pairing with afternoon tea at The Peninsula Hong Kong’s famous Lobby lounge.
